Why I'm Switching to Seaweed Pasta

I know what you’re thinking, seaweed pasta?! Sounds wild and maybe even a little weird, but I promise you it’s worth a try.

When I really thought about it, I have always been a fan of seaweed, I’ve tried it by itself in crunchy snack packs at Trader Joes and do I love it with sushi, so I thought “why not pasta?” I recently linked up with my friends at Blue Evolution to put their seaweed infused pasta to the test. Blue Evolution harvests their own seaweed all along the Pacific Coast. Every product they make is infused with high-quality seaweed grown naturally in the Pacific Ocean.

They were gracious enough to send me a bundle of their penne and rotini pasta to try. I cooked some up using Tori Pintar’s Basil Macadamia Nut Pesto Pasta recipe featured on their website. This recipe stuck out to me specifically because it was made using ingredients I often already have ready to go in my kitchen. I’m constantly on the go and, when I finally do get home and sit down, there’s little time to think about what I’m going to make for dinner. This meal took a lot of the guesswork out of it for me and I was left with an empty plate and a very satisfied stomach. Not only did it take me less than 30 minutes from start to finish, but it was so good that halfway through I completely forgot it was even made using seaweed.

So, Why Seaweed?

Seaweed is extremely nutritionally dense; mindbodygreen has even called it the “New Kale”  which makes sense when you consider how many vitamins, nutrients and amino acids it contains. Blue Evolution’s seaweed is also grown sustainably, so they can ensure it’s both delicious and nutritious. “By farming seaweed, we are able to reduce our dependence on freshwater for food production by sourcing that nutrition from the ocean--nourishing people and the planet.”
